Allow potatoes to sit for a few minutes uncovered so they may steam out any extra liquid they’ve absorbed. Salt potatoes after giving them a light toss that simply roughens up their exteriors and coats them with a floury, starchy coating.
  3. Meanwhile, combine both oils in a large roasting pan and heat in oven 10 minutes.
