  3. Add the frozen corn, cooked chicken or beef, black or pinto beans, tomato paste, chili powder, cumin, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.
  4. Stir in the cooked rice and green onions, and cook for 2-3 minutes, or until the rice is heated through.
  5. Garnish the Mexican Fried Rice with chopped cilantro and serve with lime wedges on the side.

To increase taste and texture, you can add or swap out ingredients like diced tomatoes, jalapenos, or avocado. By leaving out the chicken or beef and substituting vegetable broth for the chicken stock, you may also make this recipe vegetarian.

  5. Add the black beans and corn. If you are using cooked proteins (like shredded cooked chicken) add it at the same time. Cook for 1 minute just to heat through.
  6. Add the rice and Sauce and stir quickly to coat the rice evenly.
  7. Check seasoning and add more salt if you require it. Amount of salt required depends on the saltiness of the enchilada sauce you are using.
    Season with black pepper and serve immediately.
