How to Make Cucumber Sandwich:

First start with cream cheese, mayonnaise and fresh herbs. While I use dill and chives, you can use your favorites or any herbs available . Once the spread is all mixed up, you’ll want to thinly slice your cucumbers.I personally suggest to go for this healthy bread for the crust but you can certainly make cucumber sandwiches on any bread you’d like!

Cucumber Sandwich Tips:

This cucumber sandwich recipe can be made as long as 24 hours ahead of time.

Assuming you ensure the bread is covered with the dill cream cheddar spread, they won’t get spongy. Once made and cut, place in a holder and seal well. Store in the cooler. I like to leave them at room temperature for around 20 minutes prior to serving.

If you can’t find English cucumbers, use regular cucumbers. If using regular cucumbers, which are larger and have a thicker skin than English cucumbers, peel the tough outer skins and slice the cucumber in half lengthwise. Take a spoon and scoop the seeds out. This will prevent excess moisture from entering your finished product.

 Pick one or two and add them to create a little variety to your selection:

  • Mint adds a summery freshness
  • A few drops of lemon juice
  • Dill is one of the more common additions to cucumber cream cheese sandwiches.
  • Flat-leaf parsley or chives are also make good additions.

Arrange the sandwiches on platters. If you are serving them as part of a buffet, place them on a cake plate or a fancy silver platter.

  1. Stir cream cheese, yogurt, chives, dill and pepper together in a small bowl until well blended. Spread the mixture evenly on one side of each bread slice. Top 1 slice with cucumber slices, then top with the other bread slice, cream cheese-side down. Cut the crusts from the sandwich and cut it in half diagonally.
