You can use any type of apples for this recipe, such as Gala, Fuji, or green apple. (I used honeycrisp apples in these photos.)

You can also add any other Fall toppings you love, like dried cranberries or sliced figs. 

How to make blue cheese walnut apple salad:

In a small bowl, add the honey, dijon mustard, balsamic vinegar, olive oil, and salt. When the dressing seems well-combined and thicker, whisk it vigorously.
Note:You can prepare this dressing up to five days in advance.
However, the refrigerator could cause it to thicken.
To bring the food back to room temperature before serving, either run the tightly closed jar under warm running water or leave it out on the counter for 30 minutes.
I didn’t intentionally include garlic in my salad dressing recipe because it might get strong as it stays in the refrigerator. However, if you’d like to, you can add some.
Spread the salad out.

For this apple walnut salad, only the red onion and apples need to be thinly sliced.
For the best texture, place the apple slices and onion in a big bowl over a bed of mixed greens. (Use the pre-washed, store-bought mix for the quickest results.)
Drizzle the feta and walnuts with the balsamic vinaigrette just before serving.
This salad is best served immediately after the apples and dressing have been added.
If you want the apples to keep longer after you slice them, try rubbing some lemon juice over them to stop browning.

Best Salad Leaves to Use:

For this salad, you may actually use any lettuce you like. I prefer to use mixed salad greens since they not only bring a minor flavor variation, but they also give the dish a somewhat prettier appearance.

I would make an effort to select a mix of leaves that contains watercress or rocket. These give the meal a nice pepperiness that enhances it well.

You can use baby gem or romaine lettuce if you’d like not to use a package of mixed leaves.

Extras can be stored in a fridge section that is tightly closed. The salad greens, feta cheese, and dressing may all be prepared in advance and kept in the refrigerated for up to 5 days in separate containers. For the finest flavor and texture, use the red onion and apple slices within 24 hours.

Can I make this salad vegan? Yes, you can swap the honey for maple syrup in the salad dressing to make it vegan friendly.

Can I use another vinegar? Yes, you can use red wine vinegar or apple cider vinegar with similar results.

  1. To prepare the balsamic vinaigrette, add the olive oil, vinegar, honey, mustard, and salt to a small bowl. Whisk well, until the dressing looks thicker, then set it aside.
  2. To assemble the salad, add the mixed greens to a large serving plate and top it with the sliced apples and red onion. Then sprinkle on the walnuts and feta, if using

  3. Drizzle the dressing over the salad just before serving. You might not use all of the dressing right away, but I like to serve the extra on the side in case guests would like to add more. Leftover dressing can be stored in an airtight container in the fridge for up to 5 days. It will thicken when chilled, so run the jar under warm running tap water to thin it out again.
